You can whip up these three-ingredient biscuits in no time at all. It’s hard to believe they’re gluten-free and don’t contain flour.
If you want to cut out the sugar, you could try making them with Stevia. If you try it, let me know how you go.
Dipping one side in melted chocolate adds a fourth ingredient. It’s optional but delicious.

1 cup smooth peanut butter
¾ cup sugar
1 large egg
150g dark chocolate (optional)
Preheat oven to 180°C. Line a large shallow baking tray with baking paper.
In a bowl, mix all ingredients except chocolate with a spoon. Form into about 20 balls and arrange on the baking tray with space in between. Press each one with the tines of a fork. Bake for 9-12 minutes or until golden. Don’t overcook. I cooked mine for about 10 minutes and they could probably have done with a minute less.
Cool the biscuits on the tray. Melt chocolate in a microwave or in a bowl over simmering water. Dip each biscuit in chocolate to coat one side, then put them back on the baking paper to set.
Store in a sealed tin.
